This recipe makes four main-dish salads.<\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<p>8 cups torn Romaine lettuce<br \/>\n1 small bunch chicory (curly endive), finely chopped<br \/>\n12 ounces cooked turkey breast, cut into bite-sized pieces<br \/>\n1\u20442 cup crumbled blue cheese (optional)<br \/>\n1\u20444 cup fat-free cottage cheese<br \/>\n1 large tomato, chopped<br \/>\n1\u20442 green or sweet red pepper, chopped<br \/>\n1\u20442 yellow pepper, chopped<br \/>\n1 small red onion, chopped<br \/>\n4 hard-cooked egg whites, coarsely chopped<br \/>\n4 slices turkey bacon, cooked, drained, and crumbled<br \/>\n1 cup fat-free or reduced-fat salad dressing (try the Dijon and Tarragon dressing, included with this recipe!)<\/p>\n<p>In a large bowl, combine Romaine and chicory.<br \/>\nDivide the mixture among four salad plates.<br \/>\nTop each with turkey, mounding it in the center of the Romain mixture.<\/p>\n<p>In a small bowl, use a fork to stir together the blue cheese (if desired) and cottage cheese. Mound the cheese mixture on top of the Roman near the turkey.<br \/>\nThen attractively arrange small mounds of the tomatoes, peppers, onions, and egg whites on top of the Romain. Sprinkle with turkey bacon.<\/p>\n<p>Serve with desired dressing or <strong><em>Dijon and Tarragon dressing.<\/em><\/strong><\/p>\n<p>&nbsp;<\/p>\n<\/div>\n<\/div>\n<div class=\"layoutArea\">\n<div class=\"column\">\n<p><strong>Dijon and Tarragon Dressing<\/strong><\/p>\n<p>Ingredients:<\/p>\n<\/div>\n<\/div>\n<\/div>\n<div class=\"page\" title=\"Page 2\">\n<div class=\"layoutArea\">\n<div class=\"column\">\n<p>2\u20443 cup fat-free plain yogurt 1\u20442 cup chicken broth, defatted 2 Tbsp Dijon mustard<br \/>\n2 Tbsp honey<br \/>\n2 tsp dried tarragon<br \/>\n2 cloves garlic, minced<br \/>\n1\u20442 tsp salt<\/p>\n<\/div>\n<\/div>\n<div class=\"layoutArea\">\n<div class=\"column\">\n<p>In a medium bowl, use a wire whisk to stir together the yogurt, broth, mustard, honey, tarragon, garlic, and salt.
